Soup with pasta and pesto belongs to Italian cuisine. It is prepared in about an hour, it turns out to be very satisfying and original.
It is necessary
- For six servings:
- - chicken fillet - 200 g;
- - vegetable broth - 2 l;
- - pasta - 200 g;
- - olive oil - 150 ml;
- - a bunch of basil and parsley;
- - pine nuts - 30 g;
- - one onion;
- - four cloves of garlic;
- - balsamic vinegar - 1 tbsp. the spoon.
Instructions
Step 1
Fry the chopped onions in olive oil in a large saucepan. When it starts to turn brown, pour in a spoonful of vinegar, add chicken fillet, cut into small pieces.
Step 2
Fry the chicken until tender, then cover with a liter of vegetable broth.
Step 3
When the broth boils, put the pasta in a saucepan, cook until tender, stirring occasionally.
Step 4
Make the sauce. Combine the parsley, basil, garlic, pine nuts, and half a glass of olive oil in a blender. Beat on low speed - the sauce should not be creamy, the texture of herbs and nuts should be guessed.
Step 5
When you're serving your pasta soup, season it generously with the prepared pesto sauce. Bon Appetit!
