Tomato soups are consumed hot and cold, which makes it a welcome guest in any season. Such a soup, at the discretion of the chef, can be made high in calories by adding beans, pasta and other hearty foods. Or turn it into a light dietary soup based on chicken broth, using a minimum of vegetables, the main place among which will be the tomato.
It is necessary
- - onion (1 large head)
- - medium carrots
- - 50 g parsley root
- - 35 g fresh tomatoes or tomato paste
- - 10 g of hard cheese
- - 1.5 liters of beef or chicken broth
- - 20 g pasta
Instructions
Step 1
Boil carrots and parsley root until tender. Cut or grate them.
Step 2
Cut the onion into small pieces and fry for a short time in refined lean oil. Add boiled vegetables, tomatoes and tomato paste to it. Simmer together, covered for 10 minutes.
Step 3
Heat the meat broth and place the stewed mass in it. Season with salt, add spices and cook over low heat for 7 minutes.
Step 4
Boil pasta in pre-salted water. Remove excess liquid using a colander.
Step 5
Grind the cheese with coarse grater.
Step 6
Add pasta to a boiling pot with vegetables. Leave to simmer for 2 minutes. Then add grated cheese and boil until it melts. If desired, you can add parsley to the finished soup.
