Bulgarian cuisine is very close to Turkish and Greek. They are related not only by their love of goat cheese, spices and fresh vegetables, but also by many original ways of cooking meat.     • carrot;
    • turnip onions;
    • cream 11%;
    • Champignon;
    • vegetable oil for frying;
    • ground paprika;
    • salt
    • pepper
    • grated nutmeg.

Instructions

Step 1

Wash the meat thoroughly, dry it with napkins and cut the fibers into pieces 1-1.5 centimeters thick.

Step 2

Fight off from both sides. Try not to damage the meat. Pepper the finished chops, sprinkle with ground paprika. Set aside and start filling.

Step 3

Peel and chop half the onion. Peel and grate the carrots. Stir the vegetables.

Step 4

Select a few large mushrooms and slice lengthwise. You should have two mushroom slices for each piece of meat. Chop the rest of the mushrooms finely.

Step 5

Place a thin layer of carrot and onion mixture on each piece of meat. Salt. Do not add salt in advance, it draws moisture out of the meat and the rolls will be tough.

Place large pieces of mushrooms on the edge and roll them up so that the mushrooms are in the middle. Secure with wooden toothpicks or thick thread.

Step 7

Heat the oil well in a skillet. Dip the prepared rolls in flour and fry on all sides until golden brown. Set them aside.

In a saucepan with a thick bottom, heat the oil and lightly fry the finely chopped champignons on it.

Finely chop the remaining onion and add to the mushrooms. Season with salt and pepper, reduce heat and simmer for 10-15 minutes.

Pour the cream into a saucepan a couple of minutes before cooking and stir well. Season with salt, pepper, add a pinch of grated nutmeg.

Step 11

Free the rolls from toothpicks and carefully transfer them to the mushroom sauce. Cover and let simmer for two to three minutes.

Step 12

Garnish the rolls warm on a flat platter with fresh vegetables. Serve the sauce separately in a saucepan.
