Meat rolls with mushroom filling are a wonderful portioned dish that will turn an ordinary dinner into a festive one and will undoubtedly decorate a festive table.

- beef or pork tenderloin - 500 g;
- fresh mushrooms - 200 g;
- onions - 3 pcs.;
- butter - 80 g;

Instructions
Step 1
Prepare the mushrooms for the filling. Any meat rolls are suitable: fresh, frozen, and dried.
Step 2
Peel and wipe fresh mushrooms with a damp cloth. Boil for 30 minutes. Let them cool slightly. Chop into small pieces.
Step 3
You do not need to boil frozen mushrooms. Cut them into small pieces if necessary.
Step 4
Soak dried porcini mushrooms or honey mushrooms in milk or water for several hours until they "remember" their original volume. Drain the blackened liquid periodically and add fresh water. You do not need to boil these mushrooms.
Step 5
Peel the onion. Cut into small cubes. Fry in 1 tablespoon of butter until golden brown. Then add the chopped mushrooms and fry them along with the onions. Season with salt and pepper to taste.
Step 6
Rinse the meat with cold water, dry the piece. Cut into thin slices 3-5mm across the grain.
Step 7
Beat each slice carefully to make very thin meat "pancakes". The best way to beat the meat is not with a special hammer with a grooved surface for chops, but with a large kitchen knife. Place the blade flat. This will prevent the fibers from breaking when you wrap the filling.
Step 8
Put one tablespoon of mushroom filling on each slice and wrap it in an envelope like stuffed cabbage rolls or stuffed pancakes.
Step 9
Fry the meat rolls with mushrooms in butter. If they fall apart when frying, use toothpicks to chop the meat off or secure with rubber bands.
Step 10
Before serving, remove the toothpicks or rubber bands, put the rolls on a grater, decorate with sprigs of parsley or dill. The best side dish for a dish is baked or boiled potatoes and baked apples. Top with oil left over from frying. Serve hot or warm.
