Buza is a traditional Bulgarian drink that can replace boring tea or coffee. A distinctive feature of buza is its sour taste and good thirst quenching effect. To prepare this drink, you will need ingredients that are always in stock.

- - oatmeal - 1 kg
- - butter - 100 gr
- - yeast - 30 g
- - flour (wheat) - 2/3 cup
- - sugar - 0.5 kg

Step 1
Place the oatmeal in the water. To do this, pour the cereal into a large bowl and pour warm water over it. It is advisable to use boiled water. Leave on for 10-30 minutes to soften and swell the oatmeal. When the cereal is soaked, strain it and grind it with a rolling pin.
Step 2
Place the soaked cereal in a preheated oven. Please note that the fire in the oven should be slow if it is gas. If the oven is electric, then the power should be below average. This is necessary in order for the cereal to dry slightly.
Step 3
Grind the dried cereal into flour. To do this, you can use a mortar or grinder (blender).
Step 4
Combine oat flour, wheat flour, and butter. To do this, place the indicated ingredients in a large saucepan and stir everything thoroughly.
Step 5
Pour boiling water over the mixture. The amount of water is determined as follows: while stirring the mixture, slowly add water to the pan until the mixture becomes doughy. Once you've got the consistency you want, place the pot in a warm place for about half an hour.
Step 6
Add boiled water. Place the drink where it will cool quickly to room temperature, but not in the refrigerator.
Step 7
Add half the sugar (that's about one glass) and yeast. Let the mixture ferment.
Step 8
Dilute the "suitable" mixture with boiled water, stir and strain. Pour in the other half of the sugar, stir and leave to ferment further.
Step 9
Check if the booze has risen. If it rises and tastes sour, then your drink can be considered ready!
Step 10
Place the finished drink in a cool place, such as a refrigerator. If the taste of bouza is not sweet enough for you, you can add sugar either to the saucepan or to each portion separately.
