Chicken with rice, peas, beans, herbs and spices is the perfect dish for spring. It is incredibly tasty, bright, charging not only with energy, but also with excellent mood.
It is necessary
- Ingredients for 4-6 persons:
- - 6 chicken thighs;
- - 2 tablespoons of flour;
- - 2 onions;
- - 3 cloves of garlic;
- - 400 g paella rice (or any round rice, not parboiled or flavored);
- - 2 pinches of saffron;
- - a teaspoon of paprika;
- - zest and juice of 2 lemons;
- - 1.5 liters of chicken broth;
- - 200 g of peas and beans (you can use frozen foods);
- - a few sprigs of mint, parsley and dill;
- - salt and pepper.
Instructions
Step 1
Preheat the oven to 180C. Salt and pepper the chicken, roll in flour.
Step 2
Heat some olive oil in a frying pan, fry the chicken thighs on all sides until golden brown, transfer to a baking sheet and bake for 30-40 minutes.
Step 3
Add a little more oil to the pan, fry the chopped onion and squeezed garlic over low heat for 10 minutes. Put rice, paprika, saffron and lemon zest in a frying pan. Mix all the ingredients quickly to coat the rice with oil and absorb the aroma of the spices. Pour in the broth and simmer for 20 minutes, stirring the rice from time to time.
Step 4
Add peas, beans and juice of one lemon, simmer until rice and vegetables are cooked. We remove from the fire.
Step 5
Grind the herbs, transfer them to the rice with the juice of the second lemon, mix and add the chicken to the rice. Leave for 5 minutes under the lid and serve immediately.
