As you know, on the grill you can cook not only meat, but also fish. Mackerel is perfect for charcoal baking and turns out to be very tasty and aromatic.
Ingredients for charcoal grilling of mackerel:
- 2-3 pcs. fresh or frozen mackerel;
- 3 lemons;
- salt and pepper to taste;
- a mixture of Italian or Provencal herbs;
- some ginger root;
- a spoonful of dry basil;
- 2-3 cloves of garlic;
- vegetable oil.
Cooking mackerel over charcoal:
The first step is to carefully prepare the mackerel. The fish must be gutted, rinsed well a couple of times inside and out, remove the fins and dry.
Shallow cuts should be made on each side of the mackerel. Then rub each fish inside and out with a mixture of pepper and salt, and pour it well with squeezed lemon juice.
Mix a couple of tablespoons of vegetable oil with squeezed garlic, grated ginger root, dry basil and a mixture of Italian herbs.
With the prepared marinade, you need to grate the mackerel well, pack it in cling film and put in the refrigerator to marinate for 2-12 hours. The longer the fish is marinated, the tastier it will turn out.
You need to cook mackerel on the grill, after having greased the grate with oil. Fry each side for about 7-10 minutes, depending on the temperature of the coals.
A couple of minutes until ready to grease the fish with the remaining marinade. You can serve mackerel baked on coals with any side dish, or as an independent dish, adding fresh herbs.
