Need an idea for a romantic evening? Mackerel is stuffed with onions and bell peppers and baked in its own juice. Such a dish must be prepared exclusively in nature and on coals.
Ingredients:
- 2 mackerels;
- 2 red bell peppers;
- 1 onion;
- 3 tbsp. l. sunflower oil;
- 1 tsp spices (a set of spices for marinating grilled fish).
Preparation:
- Cut both mackerels along the ridge from head to tail.
- Carefully remove the ridges together with the bones, gut the insides, and rinse the peeled carcasses thoroughly both inside and out. As a result, you should get wide fish boats.
- Peppers and onion, peel, wash and chop finely, without joining together.
- Pour sunflower oil into a frying pan and heat it well.
- Put the onion cubes in hot oil and fry until transparent. Then put the pepper cubes to the onion, mix everything and fry for another 5-7 minutes so that the pepper is slightly browned.
- Put the spices for marinating the grilled fish in a mortar and heat thoroughly.
- Remove the frying vegetables from the stove, season with fish spices, stir and set aside for 5-10 minutes.
- Rub both mackerels inside with the rest of the fish spices.
- Take one piece of foil and spread it on the table. Place one mackerel on the foil so that the cut points up. Squeeze the foil around the mackerel with your hands, forming a boat. Thus, the whole carcass will be closed, only the cut will remain open, which must be immediately stuffed with fried vegetables. Repeat the same procedure with the second mackerel.
- Put the prepared boats on moderately hot coals and bake until tender.
Put the cooked mackerel in a hot place on a dish, garnish with lemon wedges and serve immediately.
