  • - 160 g flour,
  • - 60 g butter,
  • - 1 egg,
  • - 40 g sugar
  • - 0.2 tsp baking powder,
  • - salt to taste.
  • Filling:
  • - 100 g of jam.
  • Cream:
  • - 200 g sugar,
  • - 100 g of egg whites.

Instructions

Step 1

Mix 160 grams of flour with baking powder, sift. Pour the flour into a blender, add a little salt and sugar. Chop the cooled butter into cubes and place in a blender in the same way. Grind to small crumbs. Break one egg into the resulting flour mass and knead the dough, which is rolled into a ball and put in the refrigerator for half an hour.

Step 2

After half an hour, take out the dough and put it on a sheet of parchment, flatten it, cover with a second sheet of parchment and roll it into a layer. Then remove the top sheet of parchment and cut out circles that are larger in diameter than the basket molds.

Transfer the dough slices to baking tins, prick several times with a fork. Cover the dough circles in the tins with foil, on which you put the weight (you can use beans or peas).

Step 4

Preheat the oven to 180 degrees. Bake the baskets for ten minutes. Then remove the baskets from the oven, remove the foil and bake for another 10 minutes until golden brown. Cool the finished workpieces. Put the jam filling into the cooled baskets.

Step 5

For the cream. Combine 100 grams of egg whites with 200 grams of sugar, put in a water bath, while stirring, heat to 60 degrees. Remove cream from heat and whisk well. Transfer the cream to a pastry bag and fill the baskets. Garnish to taste and serve with tea.
