Jelly dessert with berries and cream is prepared very quickly and without the addition of gelatin. The berry dessert is perfect to serve during the hot season.
It is necessary
- - berries (strawberries or raspberries) - 400 g;
- - cream 33% - 200 ml;
- - sugar - 175 g;
- - eggs - 3 pcs.;
- - lemon - 1 pc.;
- - salt - a pinch.
Instructions
Step 1
Syrup preparation. Mix 75 ml of water and sugar, add salt. Put the mixture on fire and cook for no more than 1-2 minutes. When the syrup begins to thicken, remove from heat and cool slightly.
Step 2
Whisk the cream until crisp peaks.
Step 3
Rinse the berries, dry. Leave a few berries for garnish, and grind the rest with a blender until puree.
Step 4
Divide the eggs into whites and yolks. Beat the whites into a stable foam, add a couple of drops of lemon juice. Continuing to beat the whites, pour in the sugar syrup in a thin stream, continue to beat the mixture with a mixer for another 8-10 minutes, until thickened. Add the berry puree to the mixture, beat. Add cream and stir gently.
Step 5
Get a shape that fits. Cover it with cling film. Put the prepared dessert in a mold and put it in the freezer for 5-7 minutes. Before serving, transfer the dessert to a plate, cut into portions. Garnish with berries and mint leaves. Dessert is ready!
