It is necessary
- - 2 small tongues (pork);
- - 2 anchovies or anchovy paste;
- - 40 g of hard cheese;
- - 20-40 g butter;
- - one onion;
- - 20 g of wheat flour;
- - 40 g of vegetable oil (for frying);
- - 100 g of roots (parsley, celery);
- - peppercorns, salt - to taste.
Instructions
Step 1
Rinse the tongue well in cold water. Dip the washed tongue into boiling salted water, add roots, onions, spices and bring to readiness.

Cool the finished tongue in cold water and immediately remove the skin from it and cut into slices.

Mix the anchovies or anchovy paste thoroughly with the butter.

Fry the tongue slices with flour on one side in vegetable oil, turn over and brush with anchovy oil.

Bake the fried and greased pieces in the oven, sprinkle with grated cheese shortly before being ready and continue to keep in the oven until the cheese turns brown.
