- 1/4 cup freshly squeezed lemon juice.

You can substitute limes for lemons by using their zest and juice. This will give you squares with a sharper, fresher taste.

Place flour, sugar and salt in the bowl of a food processor and pulse to combine. Add finely diced butter and, again in a pulse mode, knead a dough that looks like coarse sand. Place it on a square, high-rimmed baking sheet lined with baking parchment and brush with a spatula. Bake in an oven preheated to 170 ° C for 18-20 minutes, until light golden brown. - 4 tablespoons of flour;

- 6 tablespoons of lemon juice.

For the glaze you will need:

- ½ cup unsalted butter;

- 1 cup of powdered sugar;

- 1 teaspoon of milk 3.5% fat;

- 2 tablespoons of cold water.

Sometimes lemon squares are made from two layers of the base, sandwiched with filling.

Mix wheat flour with powdered sugar, add butter and knead the dough. Place it on a parchment-lined baking sheet. Bake for about 15 minutes in an oven preheated to 180 ° C.
