- 100 milliliters of chicken stock

- 1/2 cup pineapple juice
- 1/4 cup apple cider vinegar
- 1 tablespoon cornstarch
- 1 teaspoon grated ginger root
- 2 "pucks" diced pineapple

- 1/3 cup rice vinegar
- 4 tablespoons brown sugar
- 1 tablespoon tomato ketchup
- 2 teaspoons cornstarch
- 1 teaspoon soy sauce
Instructions
Step 1
Cantonese Sweet & Sour Sauce Heat the sesame oil in a skillet and add the spices. Let them open for a few seconds and add half of the chicken broth, soy sauce, mirin, vinegar. Heat over low heat. Add sugar and stir occasionally until it is completely dissolved. Meanwhile, mix the starch with the remaining broth so that there are no lumps, and pour in a thin stream, stirring continuously, into the sauce. Wait until thickened and add applesauce or plum puree. Reduce heat to low and heat sauce for about 3 minutes. Remove from heat, refrigerate and store in refrigerator.
Step 2
Sweet and sour pineapple sauce
In a small saucepan, combine sugar, ketchup, soy sauce, juice and vinegar. Set aside. In another bowl, dissolve the starch in water. Set aside. Place a saucepan over medium heat and bring to a boil. Add ginger and pineapple and bring to a boil again. Thicken the sauce with diluted starch, remove from heat and let cool.
Step 3
Quick Sweet & Sour Sauce
Combine the cornstarch with water, making sure it's completely dissolved, and set aside. Combine rice vinegar, brown sugar, tomato ketchup, and soy sauce in a small saucepan and bring to a boil. Add the starch and stir until the sauce thickens.
