Technology of cooking Easter cake with almonds, raisins and candied fruits under sugar glaze

We take 200 ml of milk and warm it up a little, then pour 30 grams of fresh baker's yeast with warm milk. Add 350 grams of flour and mix. Cover with a clean towel and place in a warm place for 40 minutes.

We take 4 eggs out of the refrigerator and separate the yolks from the whites. Grind the yolks with half the sugar - 75 grams. Add yolks, flour 350 grams, salt, vanillin - 1 pinch each, 200 grams of melted butter to the dough. Mix everything.

Beat the whites with the remaining 75 grams of sugar with a mixer until a snow-white and airy mass and combine with the dough. Put in a warm place for another 2 hours. Candied fruits - 30 grams and almond petals - 30 grams roll in flour. Pre-wash the raisins in several waters and dry. Add together with the raisins - 100-150 grams to the dough that comes up and knead it well.

Let's prepare a form in which the cake will be baked. The mold must be clean and dry, coat the inside with oil. The bottom of the mold can be sprinkled with ground breadcrumbs. Put the dough so much that it takes up half of the form. Let it rise by three quarters of the form, grease the top of the cake with an egg diluted in a spoonful of milk. Put in an oven preheated to 180 degrees for 50 minutes.

Sift the icing sugar. Whisking the egg white, gradually add the icing sugar at the highest speed until the icing is obtained. Cover the cooled cake with shiny icing and sprinkle with candied fruit pieces.
