Spring for many people is not only green grass and sun. For many, spring and summer are associated with field trips and picnics. And what kind of nature can there be without barbecue? For everything to go perfectly, you need to be able to make perfect kebabs.
The ideal kebab must be properly marinated in advance. For the preparation of the marinade, many different ingredients are used: kvass, wine, mineral water, mustard, tomatoes, fruits, juices, beer, onions, spices, soy sauce. The choice of marinade depends on personal preference and meat.
Onion Marinade
The onion marinade is the most traditional and simple. It is suitable for beef, pork or lamb.
Required Ingredients:
- ground pepper - 2 tsp;
- onions - 700 g;
- meat - 1 kg.
Peel the onion, finely grate it, or chop it with a blender. It is important to make a liquid gruel.
Stir in the meat pieces and pepper. Marinate meat for at least three hours. Onions must be removed from meat before frying.
Marinade wine
Wine is an excellent base for marinating kebabs. The recipe is perfect for beef and pork neck.
Required Ingredients:
- sugar - 1 tablespoon;
- lemon juice - 2 tablespoons;
- ground black pepper - 2 tablespoons;
- onions - 3 pcs;
- dry red wine - 3 glasses;
- meat - 1.5 kg.
It is usually cooked at night. Cut the onion into half rings, mix with ground pepper, lemon juice and sugar. Fill with wine.
Mix the resulting marinade with meat and stand for 10 hours.
Kefir marinade
The kefir-based marinade is versatile. It is even suitable for chicken meat. In this case, onions should be used much less, and the pickling time should be reduced.
Required Ingredients:
- peppercorns - 10 pcs;
- hops-suneli - 1 tbsp;
- onions - 1 kg;
- kefir with a fat content of no more than 2.5% - 1 liter;
- meat - 1.5 kg.
Cut the onion into cubes and press down lightly with your hand. Mix with suneli hops and pepper.
Rub the meat with this mixture, and then cover with kefir. Be sure to shake the dishes where the meat is. It is necessary that each piece of meat is covered with marinade.
Soak the marinated meat for at least two hours in a cool place.
Mustard honey marinade
This marinade is ideal for lamb, but also suitable for pork, beef.
Required Ingredients:
- cumin - 1 tsp;
- orange peel;
- ground black pepper - 1 tsp;
- honey - 1 tablespoon;
- mustard - 1 tablespoon;
- meat - 1.5 kg.
Combine all the ingredients and create as homogeneous a mass out of them as possible.
Here, the beauty is that the meat is not greased in advance, but they do it right before frying, in nature.
If you use pork or beef instead of lamb, then beat off the meat first.
Tomato marinade
Such a marinade is able to suit not only any type of meat, but also goes well with fish.
Required Ingredients:
- basil (for fish);
- ground black pepper - 1 tsp;
- onions (for meat) - 0.5 kg;
- tomatoes - 1 kg;
- fish fillet or meat - 1.5 kg.
Cut the washed tomatoes into quarters or halves. Divide the onion into half rings and mix with the pepper. Combine all ingredients.
Marinate the meat for 4 hours. An hour is enough for fish. You can cook with vegetables - zucchini, bell pepper.
Some general cooking tips
Meat, fish, chicken should not be salted too much and right before frying. Then the kebab will be softer and juicier. Spices and spices can be added to any of the marinades described to taste.
