Flounder is delicious, with tender white meat, which is rich in vitamins A, B and E, thiamine, riboflavin and a huge amount of micronutrients and minerals. With all this, flounder is one of the cheapest fish on sale. And you can cook a lot of a wide variety of dishes from it.
Many people do not like flounder because of the specific smell that appears when fish is fried, but it can not only be fried, but also baked or boiled. Unpleasant cooking odors can be avoided by cutting the fish properly and removing its skin.
Rinse the carcass under running cold water, place on a cutting board and cut off the head, making cuts in the shape of the letter V. Then, cut off all the fins and tail with a knife or kitchen scissors. Take out the insides and rinse the fish thoroughly inside and out. Then remove the skin.

A very tasty dish - flounder in tomato sauce with mushrooms. For cooking, take:
- 600 g of flounder;
- 1 head of onion;
- 120 g of porcini mushrooms;
- 50 g of crab meat;
- a small bunch of parsley and dill;
- 3 tablespoons of tomato sauce;
- ground black pepper and salt.
Cut the prepared flounder into portions. Simmer with half of the greens in a little water for 5 minutes. Boil porcini mushrooms, cut into pieces and fry in vegetable oil. Boil the crab meat. Cut the onion into small pieces.
Heat a small amount of vegetable oil in a saucepan, fry the onion in it until golden brown, add 1 tablespoon of flour and tomato sauce. Mix everything thoroughly so that there are no lumps. Pour a small amount of water into a saucepan, season with salt and pepper to your liking, and place the fish and mushrooms in the sauce. Bring everything to a boil and boil for literally 2-3 minutes. Place the fish and mushrooms on a serving plate, top with the crab meat and pour the tomato sauce over everything. Chop the remaining herbs and sprinkle on the dish.
Canned crab can be used in this dish instead of fresh crab meat.
Flounder baked with potatoes and onions is a portioned dish that can be served both with a regular dinner and with a festive table. To prepare fish according to this recipe, take:
- 0.5 kg of flounder;
- 5 pieces. medium-sized potatoes;
- 2-3 heads of onions;
- 1 tablespoon of bread crumbs;
- 2 tablespoons of sunflower oil;
- 100 g sour cream;
- greens (dill and parsley);
- ground black pepper and salt.
Peel the onion and cut into small pieces. Salt it in a little vegetable oil until transparent.
Grease a frying pan or baking dish with vegetable oil and place the prepared flounder. Sprinkle it with a little salt and pepper.
Peel the potatoes and cut them into thin slices. Put it on the fish, on top - sautéed onion, pour over everything with sour cream and sprinkle with bread crumbs. Place the fish in a preheated oven to bake. The dish is ready when the casserole is covered with a fried crust. Serve the flounder in the dish it was cooked in, and generously sprinkle the casserole with chopped parsley and dill.
