Kohlrabi is used most often for preparing cold dishes and snacks in Asian cuisine. It is also subjected to heat treatment. This vegetable tastes like the inside of a cabbage or turnip.
Despite the fact that kohlrabi belongs to the cabbage family, it really looks very much like a turnip. And in Italy it is called calvole rapa, that is, cabbage turnip. Kohlrabi comes in different colors: from green to purple. It is rich in vitamins A, B, C, PP, as well as trace elements. This dish belongs to Chinese cuisine.
Salad recipe:
- kohlrabi 260 g;
- fresh cucumbers 190 g;
- canned green peas 130 g;
- dill greens 22 g;
- salt 6 g;
- lemon juice 10 g;
- lettuce leaves 10 g.
Technology of cooking salad with kohlrabi, cucumber and green peas
Kohlrabi is washed and peeled, and then cut into strips. Cucumbers are also washed and cut into strips. The prepared vegetables are mixed, green peas are added, salted and seasoned with lemon juice.
