An unusual vegetable dish that will appeal to even the most outcast vegetarians. Vegetables go well with each other.
It is necessary
- - 1 eggplant;
- - 2 zucchini zucchini;
- - 2 bell peppers (red and yellow);
- - 1 onion;
- - 1 carrot;
- - 4 tomatoes;
- - 2 tbsp. vegetable oil;
- - 1 tbsp. tomato paste;
- - 1/2 tsp Sahara;
- - 1 bay leaf;
- - 1 clove of garlic;
- - thyme, basil, salt, pepper;
- - parsley.
Instructions
Step 1
First, prepare your vegetables. Rinse them thoroughly under running water and pat dry with a towel. Pour boiling water over the tomatoes and peel them off. Then cut into large cubes with a sharp knife. Remove the center and all the seeds from the bell pepper. Cut it into strips.
Step 2
Heat oil in a skillet with high sides and sauté the chopped onion on it. Transfer the bell peppers to the skillet. Add a pinch of salt and pepper. Cook the vegetables for at least 4 minutes, stirring occasionally.
Transfer the cooked vegetables from the skillet to a separate bowl.
Step 3
Eggplant, cut into small pieces, also fry in a pan. As soon as the pieces turn brown, they are ready. Remember to season with salt and pepper before frying. Transfer the eggplant to a bowl with your fried vegetables.
Step 4
Then fry the finely chopped carrots. Cut the zucchini into circles and fry in a pan. As soon as the zucchini has become golden brown, add the vegetables and pasta cooked earlier.
Step 5
Toss the entire contents of the pan and add the tomatoes, bay leaves, and spices. Add sugar and stir the dish again. Cook the ratatouille for at least 10 minutes with the lid on.
Step 6
Transfer the chopped parsley and garlic to a dish before finishing cooking. But the bay leaf, thyme and basil need to be removed. Stir the ratatouille again and turn off the stove. The dish is ready, you can invite everyone to the table!
