Ratatouille is a fairly simple and extremely tasty vegetable dish. It is cooked in the oven, looks beautiful on the dining table and can decorate any holiday.

It is necessary

  • For the dish:
  • zucchini - 2 pcs.
  • eggplant - 2 pcs.
  • tomatoes - 3 pcs.
  • potatoes - 3 pcs.
  • cheese - 100 g
  • For the sauce:
  • sour cream - 100 g
  • olive oil - 1 tbsp l.
  • dill / parsley - 50 g
  • salt - 1/4 tsp
  • spices: asafoetida, black pepper

Instructions

Step 1

Wash the potatoes, place them in a pot of water. Place on medium heat. Boil the potatoes until half cooked.

Step 2

Wash the rest of the vegetables - eggplants, zucchini, tomatoes. It is better to take vegetables of about the same diameter to make the ratatouille beautiful.

Step 3

While the potatoes are cooking, cut the eggplants into round wedges. Soak the sliced eggplant in salted water for at least 15 minutes to remove its natural bitterness.

After that, cut the rest of the vegetables - zucchini and tomatoes also into round slices. Check the potatoes, if they become soft on top, cool them. Then peel and cut into round pieces as well.

Then prepare the sauce. To do this, use a blender to mix all the ingredients for the sauce - sour cream, herbs, olive oil and salt. Add spices to make it hot. Add 1/2 teaspoon Indian spice asafoetida. It will add an onion-garlic flavor to the sauce.

Step 6

Start laying out the ratatouille. You can put the vegetables in a round shape, such as in a cast iron skillet. A rectangular shape is also suitable. Pour a spoonful of olive oil into the bottom of the mold. Then, alternately vertically lay out the slices of vegetables - eggplant, zucchini, potatoes, tomato. And so on in a circle.

Step 7

After filling the entire mold with vegetables, pour the sauce over the vegetables. Do this in such a way that the sauce falls between the wedges.

Step 8

Preheat oven to 190 degrees. Cover the tin with foil and bake the ratatouille. While the vegetables are baking, grate the cheese on a coarse grater. Turn the dish over in the oven occasionally to bake all the vegetables.

Step 9

After one hour, the dish should be almost ready. Remove the foil from the vegetables and sprinkle the grated cheese on the ratatouille. Bake for another five minutes until crispy cheese crust appears. Serve hot.
