Ratatouille is a vegetable dish that mainly consists of eggplant and zucchini. There are many variations of this vegetable recipe in different cuisines of the world, and it is called by different names. But there is a classic recipe for ratatouille.

It is necessary

  • -3 medium eggplants
  • -2 medium zucchini
  • -2 pcs. onions
  • -2 pcs. bell pepper
  • -3 tomatoes
  • -1 head of garlic
  • -1 bunch of parsley
  • -a couple of sprigs of thyme
  • -1 sprig of basil
  • -salt, pepper to taste
  • -olive oil

Instructions

Step 1

Rinse the eggplants and zucchini in water, remove the top, and then cut into slices, transfer to a bowl and sprinkle with salt, leave for 10 minutes so that the excess liquid is glass, and the bitterness disappears with it.

Step 2

Peel the onion, remove the seeds from the pepper, rinse these vegetables with the tomatoes, and then pat dry on a paper towel. On a cutting board, cut the onion into small cubes and the pepper into strips. Cut the tomatoes into 2 parts, and then cut into medium-sized half rings, chop the garlic in a garlic press.

Step 3

Take a frying pan, pour about 100 g of oil into it, heat it well, put the onion in it and fry it. After frying the onion, add the pepper and garlic to it, fry for a few more minutes, then transfer to a clean bowl.

Step 4

Drain the water from the zucchini and eggplant, and put the vegetables themselves in a pan with the oil left over from frying the onions, peppers and garlic. Fry vegetables until golden brown, turning or stirring constantly.

Step 5

Add already fried vegetables, tomatoes and herbs to the zucchini and eggplants, salt and pepper the ratatouille, and then simmer the vegetables over low heat for 10-15 minutes, adding oil or water if necessary.

Put the finished ratatouille on plates, sprinkle with herbs and serve. Bon Appetit!
