Cottage cheese or cheese cakes - the most delicious dish from childhood! Who doesn't love him? It is unlikely that there will be one. With sour cream and condensed milk, jam and berry syrup - with all these gravies, cheesecakes acquire their own unique taste.
Cottage cheese pancakes are a dish familiar to everyone from childhood. Almost everyone loves them. Preparing cheesecakes will not be difficult and will not take a lot of precious time. Cheesecakes, as they are also called, are especially fond of the younger generation. In children's institutions, such a dish is far from uncommon. They are served for breakfast, seasoned with traditional sour cream and jam, honey or condensed milk.
In order for the cheesecakes to turn out really tasty and not disappoint, you need to be very careful about choosing the main ingredient - cottage cheese. Ideally, this is when it is homemade. But since this will take a lot of time, and there is always not enough time, you can buy cottage cheese ready-made. It must be absolutely fresh and dry. You should buy this dairy product from a trusted manufacturer, which is famous for the high quality of manufactured products. The first step is to prepare all the ingredients of this delicious dish in advance. To prepare classic cheesecakes, you will need the following ingredients (designed for 12 pieces):
- cottage cheese 9% - 500 grams (2 packs of 250);
- sugar - 2 tablespoons;
- flour - 2 tablespoons;
- egg - 1 piece;
- salt - a pinch;
- vanilla sugar to taste - 1 teaspoon;
- vegetable oil for frying.
First step
At the first stage, the cottage cheese should be placed in a cooked dish and an egg, sugar and vanilla should be added to it. This mixture must be gently rubbed with a fork or spoon until completely homogeneous. It will take some effort to do this. But, the better this mixture is ground, the richer the taste will be. Pounded cottage cheese should turn into an absolutely homogeneous and plastic mass without any lumps and egg residues. Visually, this dough should have a pleasant creamy color. At this stage, it is necessary to taste the cooked mass in order to understand whether it is sweet enough. After all, curds are often used traditionally with sour cream. And if it is sour, then with sweet cheesecakes this will be what you need.
If the taste of the curd mass is still very sour, then in this case you need to add a little more sugar and mix it well again until smooth. Then you need to add flour to the prepared curd mixture. This is required in order to "tie" the mass for the syrniki. Thus, they will not disintegrate in the pan during frying and turn over well from side to side. You should not put a lot of flour in the dough. Otherwise, the taste of cottage cheese will be mercilessly muffled, and the cheesecakes will turn out to be dry. Flour is required to take wheat and premium.
Second step
The next stage is directly sculpting the curds. If the mixture sticks strongly to your hands and turns out to be a little thin, then in this case you can add another spoonful of flour. Sometimes this is due to the fact that the curd was not very dry. Sculpted cheesecakes must be additionally rolled in flour. To do this, you need a small saucer, on which you need to pour flour in a heap. Also, you should prepare in advance the surface where the stuck curds will be laid out. This could be a cutting board or serving tray. It is important to note that it is better to mold all the cheese pancakes, and then start frying them. This is necessary in order to prevent the first batch from burning while the next one is being molded.
Another important point. It is advisable to sculpt all cheesecakes of the same size. So they will be fried at the same time with high quality. To achieve the same size, you need to measure the mass with a tablespoon or a special ice cream spoon. Transfer the dough from a spoon to your hand, roll it in flour, and then flatten it a little from two barrels. You should have a flat hockey puck. The thickness of the syrniki should not exceed the thickness of your own finger. Otherwise, it will be difficult to bake cheese cakes. If they are made thinner than a finger, they will easily lose their juiciness during frying and will taste dryish.
Third step
The third stage is frying. You need to put the pan on the stove. When the oil heats up on it, you should lay out the syrniki and slightly reduce the temperature to medium or slightly less. If the fire is intense, the syrniki will quickly fried on top, but not fried on the inside. After one side is browned, the cheesecakes should be turned over and the other should be browned. Ready-made curds are laid out on a prepared dish. They can be eaten both warm and chilled. Here everyone has their own taste preferences.
There are also different sauces to choose from. After all, imagination can be limitless, since cottage cheese makers are combined with almost any taste preference. They can be sour cream, sweet gravies, honey, condensed milk, jam, jam, as well as various berries and fruits. The dish is not only tasty, but always looks very aesthetically pleasing and appetizing.
This wonderful dish from childhood will definitely become a complete breakfast for everyone. Healthy and incredibly tasty. Maybe every day you won't be able to pamper your loved ones with this simple gastronomic masterpiece, but once a week you can still please everyone with wonderful curd cakes with sour cream.
