Pearl barley is a very useful cereal, practically not inferior in its medicinal properties to the famous oatmeal, but not so popular. Meanwhile, it can be used to make a variety of dietary meals, including a healthy side dish that goes well with meat and fish, as well as vegetables and legumes.

- For a simple barley garnish:
- - 400 g of pearl barley;
- - 4 onions;
- - salt;
- - vegetable oil;
- For barley with vegetables and mushrooms
- - 350 g of pearl barley;
- - 1 onion;
- - 1 carrot;
- - 100 g of champignons;
- - 30 g butter;
- - 2 pinches of ground black pepper;
- - salt;
- - vegetable oil.
Instructions
Step 1
Simple barley garnish
Go through the barley, remove dark grains and debris, rinse it thoroughly and soak it in cold water for several hours at room temperature. It is best to leave it overnight.
Step 2
Drain the liquid from the cereal, pour 5 cups of boiling water over it in a saucepan and put on high heat. Boil it until cooked through for an hour. Salt the barley only at the very end of cooking to taste. Transfer to a colander and rinse with hot water if mucus has formed.
Step 3
Peel and cut the onion into small cubes. Heat the vegetable oil in a large skillet and fry the onion in it until transparent, then add the porridge to it and simmer it under the lid over medium heat, stirring with a wooden spatula, for about 5 minutes.
Step 4
Pearl barley garnished with vegetables and mushrooms
Prepare the cereal, pour it into a deep bowl with 5 tbsp. chilled boiled or filtered water and leave for half an hour. Place it in a fine mesh sieve with a handle and place it over a saucepan of about the same diameter, half full of boiling water.
Step 5
Steam the barley for 20 minutes, then pour the liquid out of the pan and pour 4 tbsp. clean water. Stir 0.5 tsp in it. salt and 1 tbsp. vegetable oil. As soon as it boils, put the steamed cereal there, reduce heat to low and cover the dish with a lid for 20 minutes.
Step 6
Peel vegetables and mushrooms and chop: cut the onion into thin half rings, the champignons into longitudinal slices, the carrots into strips. Heat vegetable oil over low heat and fry the listed ingredients in it as follows: first - onion for 2-3 minutes, then toss carrots to it for 3-5 minutes and, finally, mushrooms for another 7-10 minutes until the liquid has completely evaporated.
Step 7
Stir pearl barley porridge, butter into the contents of a frying pan, add salt if necessary, pepper, cover and heat with frying.
