Not everyone loves barley porridge. And in vain! Indeed, pearl barley contains a lot of vitamins and microelements useful and necessary for the body. Iron, potassium, calcium, copper, iodine, vitamins A, D, E, essential amino acids such as lysine, and an abundance of phosphorus, protein and fiber. Therefore, barley should take one of the main places in your menu, all the more so - it can make a very good and tasty side dish for any meat.

- 2 large carrots

Instructions
Step 1
Take 400-500 grams of pearl barley. Sort it over, then rinse until the water runs clear.
Then soak the pearl barley in cold water. It is better to soak the pearl barley overnight, but you can simply pour water over it for 3-4 hours before cooking. If you do not have time, then you do not need to soak the cereals, but it will take much longer to cook.
When the barley is well soaked, start cooking.
Step 2
Grate the carrots on a coarse grater and chop the onion finely.
Put a frying pan over medium heat, heat any oil in it, for example, a piece of butter.
Put the onion in a pan and fry until transparent, stirring constantly. Add carrots to the onion, fry in the same way.
Remove the pan from the stove.
Step 3
If you soaked the cereal in advance, then drain the water from it. Then add to the carrots and onions and stir. If you did not soak the barley, then just pour the washed cereal into a frying pan.
Step 4
Divide the mixture into pots or any other deep baking dish.
Step 5
Heat the broth separately in any container. If you do not have broth, then just heat the water by putting bay leaves in it. Add any spices to taste, season with salt.
Pour the liquid into your baking dishes. You can add bay leaves on top if you wish.
Step 6
Place the baking dish in a preheated oven at 200 degrees. Place the lids on top. If you have pots, place them so that they do not touch each other.
Reduce the temperature to 150 degrees in about half an hour. Leave the porridge in the oven for another hour. If your groats have not been soaked in advance, then add more warm water and increase the cooking time by half an hour.
When all the water from the porridge has evaporated, turn off the heat and leave the porridge in the oven for another 20-30 minutes to disperse and breathe.
Garnish for any meat is ready.
