Crepes stuffed with cream is a delicious dessert. But often such filling is greasy and harms the figure. But if this cream is made on the basis of flour, milk, sugar and a couple of additional components, then you don't have to worry about extra calories. Freshly squeezed lemon juice will add a special taste to the cream.
  It is necessary
- For pancakes:
 - - egg 2 pcs.
 - - milk 150 ml
 - - flour 100 g
 - - butter
 - - salt
 - For the cream:
 - - flour 50 g
 - - sugar 75 g
 - - juice of 1 lemon
 - - milk 250 ml
 - - yolk 4 pcs.
 - - vanilla pod 1 pc.
 
Instructions
Step 1
To make pancake dough, beat two eggs, add milk and stir well. Add a lump of butter, flour and a pinch of salt. Beat all the ingredients again until smooth. Then you can bake pancakes.
Step 2
To prepare the cream, boil the vanilla milk in a small saucepan. In a bowl, beat the yolks with sugar, add flour and, stirring constantly, pour the mixture into the hot milk in a small stream.
Step 3
Transfer the cream to a water bath and, when it begins to thicken, pour the lemon juice into it in small portions. Continue cooking the cream for about 15 minutes.
Step 4
Spread the resulting filling on each pancake and roll them up. Sweet dessert can be served at the table.
