It is necessary

  • Cucumber Gazpacho:
  • - 1 kg of cucumbers;
  • - 2 small onions;
  • - a bunch of green onions;
  • - 0.25 lemons;
  • - 1 head of young garlic;
  • - a bunch of arugula;
  • - 1 green bell pepper;
  • - salt;
  • - freshly ground black pepper;
  • - 3 tablespoons of olive oil;
  • - fresh mint for garnish.
  • Quick tomato soup;
  • - 1 liter of tomato juice;
  • - 2 eggs;
  • - 150 g ham;
  • - 2 large tomatoes;
  • - 1 cucumber;
  • - 0.5 bunch of parsley;
  • - salt pepper.
  • Soup "Red Sauce":
  • - 300 g of ripe tomatoes;
  • - 4 cloves of garlic;
  • - 1 green bell pepper;
  • - 4 tablespoons of vegetable oil;
  • - 1, 5 tablespoons of vinegar;
  • - 1, 5 cups of cold boiled water;
  • - 200 g of stale bread;
  • - salt;
  • - freshly ground black pepper.

Instructions

Step 1

Cucumber gazpacho

A very popular dish is the old Spanish gazpacho soup. Most often, tomato gazpacho is prepared, but the cucumber version turns out to be no less tasty. Wash and peel the cucumbers and chop them into cubes. Set aside some of the cucumbers for dressing. Remove the hard parts of the leaves from the arugula. Peel green bell peppers from partitions and seeds, chop finely. Place vegetables in a blender and chop. Add salt, freshly ground black pepper and olive oil. For a richer taste, you can pour lemon juice into the soup.

Step 2

Pound the garlic in a mortar. Finely chop green and onions, dill. Mix herbs with cucumbers. Place a slide of the dressing in the center of the serving plates and cover it with the vegetable mixture from the blender. Garnish each serving with fresh mint leaves.

Quick tomato soup

A very simple option suitable for a summer lunch is tomato soup. Boil the eggs, peel the cucumber and remove the seeds. Pour boiling water over the tomatoes and peel them off. Finely chop eggs and vegetables, chop the ham into cubes.

Step 4

Pour the tomato juice into a saucepan and heat it without boiling. Chop the garlic, add it to the juice. Season the mixture with salt and mix well. Put vegetables, eggs and ham in a saucepan, stir. Pour the soup into bowls, sprinkle with finely chopped parsley and add sour cream.

Step 5

Soup "Red sauce"

Another variant of summer soup is popular in Portugal. To prepare it, you need very ripe sweet varieties of tomatoes. Peel ripe tomatoes from the skin and seeds. Chop the pulp very finely. Transfer the tomatoes to a mixer bowl and beat until smooth.

Step 6

Peel and rub the garlic with salt and finely chopped green bell peppers. Pour the tomato mixture into a saucepan, add finely chopped herbs and pounded garlic. Pour vegetable oil, cold boiled water and vinegar into a saucepan, mix everything well.

Step 7

Cut the stale bread into small squares and add them to the soup before serving. Sour cream can be served separately.
