This cinnamon plum cake is a delicious and simple dessert with an unforgettable scent. The dough has a strong and pleasant aroma and has a delicate and crumbly structure.

- Dough:
- - 5 eggs
- - 1 cup of sugar
- - 1 bag of vanilla sugar
- - 80 g softened butter
- - 1 small lemon (zest and juice)
- - 2 cups of flour
- - 1 tablespoon baking powder
- - 1 cup walnut kernels (finely chopped)
- Filling:
- - 1 kg of plums
- - 1 bag of vanilla sugar
- - 4 tablespoons of sugar
- - 1 tablespoon of cinnamon
- - 1 tablespoon caster sugar
Instructions
Step 1
First, wash the plums, dry them. Next, remove the seeds and cut into quarters. Then combine sugar, vanilla sugar, cinnamon and add plums. Mix everything well.
Step 2
To prepare the dough, take a bowl and beat the egg whites with a pinch of salt in it until fluffy.
Step 3
In a separate bowl, combine egg yolks, granulated sugar, vanilla sugar at a fast pace until pale yellow. Then add the melted butter and continue stirring for a minute.

Add lemon juice, zest, then flour and finally beaten egg whites. Now add the plum filling to the dough and stir well.

Pour the dough into a baking dish covered with parchment paper. Sprinkle with chopped walnuts on top.

The cake should be baked in the oven at 200 C for 30 minutes until tender. You can check the readiness with a wooden skewer.
