The contents of the package that has been on the shelf for 2 days has a neutral effect on digestion. Children should not be given kefir that has been stored for more than 3 days.

Kefir, stored for a week, loses all its beneficial properties. All microorganisms in it have already died, and the alcohol content has reached 6-7%. In addition, there is a risk of poisoning with such a product. Kefir packages often indicate a shelf life of 10 days, however, high-quality natural kefir is not stored for more than 3-5 days.

Carefully read the composition of kefir on the packaging. The components of real kefir are pasteurized milk and kefir mushroom starter culture. True, dairies also produce a drink based on dry milk sourdough, but it can no longer be considered kefir. If you have biokefir in front of you - even better. It is usually well tolerated even by people with dairy allergies. In addition to the fungus, it contains lactic acid bacteria. Their content should be 107 CFU per 1 gram of product. Biokefir should also contain yeast - 104 CFU in 1 gram. A product with fruit additives cannot be considered kefir. Fat content and consistency is a matter of your personal preference. If you are losing weight, then, of course, buy kefir with a small percentage of fat. But the fat content does not affect the quality of kefir, it is better to pay attention to the amount of protein - it should be at least 3%. The consistency must correspond to the fat content stated on the package. For example, kefir with a fat content of 3, 2% should be thick enough.

Having poured kefir into a glass, take a closer look at the drink. It should have a uniform consistency, white or slightly creamy shade. If the liquid has stratified and serum appears on the surface, then you can no longer drink it. You need to eat kefir at room temperature. A pungent smell is also a sign of spoiled kefir.
