Step 1
You can use beef or chicken to make a Tatar pie, but the dish is especially fragrant with lamb. Start cooking with meat. Cut it into small pieces, season with salt and pepper to taste, add spices of your choice. Stir well and refrigerate for about an hour. Prepare the dough at this time.
Step 2
The flour must be sifted, then the dough will be airy. Grate the butter on a coarse grater and add to the flour. Mix thoroughly with your hands. Add sour cream, milk or water, vinegar and knead the dough. You should have a ball. Cover it with cling film and refrigerate. After 20 minutes, roll out the dough, fold into an envelope and refrigerate again for 20 minutes. This procedure must be repeated several times, only then the dough will turn out flaky, and this is exactly what is needed for the cake.
Step 3
While the dough is in the refrigerator, it's time to start filling. Cut the potatoes into slices, cut the onion into rings or half rings. If the dough is ready, proceed to the next step. Divide it into two parts: one should be slightly larger than the second. Roll most of it into a circle and place in a greased baking dish. Keep in mind that the dough must be larger than the mold in order to form the sides and bottom.
Step 4
On the dough, slightly pressing down, put a layer of meat and potatoes, cover the food with a layer of onions. Put a few slices of butter on the very top. Just remember that you need very little of it if you cook from fatty meat, and if the filling, for example, from chicken, then you can not regret the oil. Cover the cake with a second circle of dough and pinch the edges, joining to the bottom layer. Make a hole in the center and cover it with a small onion. Brush the cake with egg yolk and send to the oven. Bake at 180-200 degrees for about an hour and a half. Remove the finished dish from the oven, let it stand for about 20 minutes.
