The filling of this pie can be not only potato - stewed cabbage, apples with raisins, cinnamon and sugar, Adyghe cheese with tomatoes and herbs are suitable. It all depends on your imagination and preferences.
It is necessary
- For the test:
- Flour - 400 gr
- Kefir - 200 gr
- Sour cream - 2 tablespoons
- Salt - 1 tsp
- Sugar - 2 tsp
- Soda - 1/2 tsp
- Lemon juice
- Whole coriander - 1/2 tsp
- Ground coriander - 1 tsp
- For filling:
- Potatoes - 4-5 pcs.
- Butter
- Spices: fenugreek, asafoetida, black pepper, salt
Instructions
Step 1
First, sift 400 grams of flour. Combine flour with dry ingredients: salt, sugar, ground and whole coriander.
Step 2
Then mix 200 grams of kefir with two tablespoons of sour cream. Extinguish half a teaspoon of baking soda with lemon juice. Add it to the kefir mixture. Whisk with a whisk.
Step 3
The next step is to combine the liquid and dry ingredients and knead into a soft dough. Leave the dough to rest for half an hour under the plastic wrap.
Step 4
Wash, peel and chop the potatoes to cook them faster. Boil the potatoes in salted water until tender. Mash hot potatoes with spices and butter. Fenugreek gives a mushroom flavor, while asafoetida gives a garlic-onion flavor.
Step 5
Set the oven to preheat at 170 C.

Divide the resulting dough into two unequal pieces. Roll out two-thirds of the dough and place on a greased and floured baking sheet. Make bumpers and lay out the filling. Roll out the rest of the dough and close the pie on top, pinch the edges. Use a fork to make indentations in the dough. You can anoint the cake with butter on top.
