Oysters are representatives of marine bivalve molluscs, most of them can be eaten even raw. If you decide to pamper yourself and your guests with an exotic dish of oysters, then serve them with a spicy sauce.
It is necessary
- For four servings:
- - 12 fresh oysters;
- - 60 g butter;
- - 4 st. spoons of wheat flour, bread crumbs;
- - 6 stalks of green onions;
- - a bunch of parsley;
- - 2 celery, 2 stalks of tarragon;
- - 1 kg of coarse salt;
- - common salt, a pinch of chili pepper, black peppercorns.
Instructions
Step 1
Put the oven to preheat to 220 degrees. Fill a baking tray with rock salt halfway.
Step 2
Melt butter in a skillet over medium heat, add flour, fry until smooth (about two minutes). Add the oyster juice (for this, open the oysters over a bowl), cook until the sauce thickens to a paste. Season with cayenne pepper, chives, celery, tarragon, parsley, pepper and salt. Reduce heat, cook for 1 hour. Transfer the sauce to a food processor, add bread crumbs, and make a smooth paste.
Step 3
For oysters, remove the top flaps. Using a knife, carefully separate the oyster from the shell and place it on a pillow of salt. Let the oysters stand for a while.
Step 4
Put the paste in a pastry bag with a curly nozzle, cover the oysters with the paste. Cook in the oven for no more than seven minutes.
