- For four people:
- - parsley - 1 tsp;
- - sprigs of rosemary - 1 pc;
- - dried basil - 0.5 tsp;
- - thyme - 0.5 tsp;
- - dried sage - 0.5 tsp;
- - dried marjoram - 0.5 tsp;
- - sea salt - 0.25 tsp;
- - olive oil - 2 tablespoons;
- - lemon - 1 piece;
- - fresh salmon - 1 kg.

Step 1
Mix salt and all herbs, add lemon juice and olive oil. Stir the mixture well and let it brew for a while.
Step 2
Rinse the fish in water, remove any excess, clean it. Cut into medium sized pieces. Dab with a paper towel at the end.
Step 3
Place the fish in an airtight bag, cover with marinade, stir and refrigerate for 60 minutes.
Step 4
Preheat oven to 230oC. While it is heating, place the marinated fish pieces on the wire rack. Put a baking sheet in the oven one level below, put a wire rack with fish above and bake for 15 minutes. Try not to overexpose or overcook the dish.
Step 5
After taking it out of the oven and slightly chilling, serve the baked salmon with herbs to the table along with a simple salad of tomatoes, cucumbers, dill and butter.
