Dorado is a delicious and dietary sea fish, which contains only 87 kcal per 100 grams. Dorado, baked with herbs, will appeal to connoisseurs of healthy and wholesome cuisine, as well as those who follow a diet.
For cooking you will need:
- dorado
- olive oil
- lemon
- arugula
- thyme
- mint
- sea salt
- pepper mixture
Clean, gut and dry the fish with a paper towel. Make several longitudinal cuts on the back. Salt the fish on both sides. Cut the lemon into thin slices. Tear thyme, arugula and mint with your hands.
Stuff the dorado with lemon and herbs. Insert a couple of lemon slices into the cut on the back. Place the fish on a baking sheet and drizzle well with olive oil. Bake dorado in an oven preheated to 180 degrees, 10-15 minutes.
It is important to remember that Dorado does not like long heat treatment, therefore, in order for the meat to remain tasty and soft, the maximum cooking time in the oven should not exceed 15 minutes. When cooking in a pan, the time is reduced to 7-10 minutes.
Serve dorado baked with herbs, best of all with asparagus, rice or vegetables. You can use wine or lemon-mustard sauce as a dressing. Also, dorado is suitable for dry white wine, which will emphasize the taste of the dish.
