Many people wonder how to cook delicious squash caviar at home? The squash caviar turns out to be special.
Cooking caviar will not take much of your time, and ready-made homemade caviar will not leave anyone indifferent. We need the following ingredients:
- Zucchini (peeled and seeds) - 6 kg;
- Onions - 1 kg;
- Garlic - 4 heads;
- Carrots - 4 pieces;
- Mayonnaise - 500 gr (must be taken with the highest fat content);
- Tomato paste - 500 gr;
- Vegetable oil - 300 gr;
- Sugar - 1 glass (200 gr);
- Salt - 4 tbsp. l;
- Ground black pepper - 1 tsp;
- Bay leaf - 2 pieces;
- Vinegar - 200 ml;
- Spices to taste (hot paprika, hops-suneli).
Cooking process
We peel zucchini, onions, carrots, garlic, pass everything through a meat grinder. Add mayonnaise, tomato paste, vegetable oil, mix everything thoroughly. Cook on the stove for 1, 5 hours. Then add salt, sugar, pepper, bay leaves, spices and cook for another 1.5 hours. After that, add 200 ml vinegar (for 6 kg) and boil the caviar for another 30 minutes.
After cooking, take out the bay leaf, and put the hot caviar in sterilized jars and roll up. We turn the cans over and put the bottom down, wrap them with a towel, wait until they cool completely.
