Pork with pineapple is a rather exotic dish with a spicy taste. It is better to serve pork with a sweet and sour sauce that emphasizes the originality of meat cooked with fruit.
In Russia, pork with pineapples can be tasted in any Chinese restaurant. However, it is much easier and cheaper to prepare the dish yourself.
For pork with pineapples, you will need the following ingredients: 500 g of lean pork fillet, 300 g of fresh or canned pineapple, 1 tbsp. l. wheat flour, 1 tbsp. l. starch, 100 ml soy sauce, 4 tbsp. l. tomato paste or 2 ripe tomatoes, 40 g sugar, 2 tsp. 9% vinegar, black pepper, salt, fresh dill or parsley, ginger. To fry the ingredients, you need 3-4 tbsp. l. vegetable oil.
Cooking pork dishes begins with the preparation of the meat. Fillets are cleaned of films and washed in running water. The meat must be dried with paper napkins and cut into 2x2 cm pieces. Fresh ginger root is rubbed on a fine grater. To prepare the marinade, 1/2 teaspoon of chopped ginger is enough. Pour the prepared pork with sifted wheat flour and starch, pour soy sauce and mix well with grated ginger. The meat should be in a thick marinade for about 10-15 minutes.
If desired, add chopped garlic and chili peppers to the marinade. Chinese dishes are distinguished by a rich, spicy taste.
Of course, it is best to prepare the dish using fresh, ripe pineapple. However, in its absence, you have to get by with the canned version. Having opened a jar of exotic fruit, the juice is poured into a separate plate. Canned pineapples are thrown in a colander and washed with cool water. You need to wait until all the liquid has drained from the fruit.
Cut the pineapple into small cubes, about the same size as the pork pieces. Heat vegetable oil in a frying pan and fry pineapple cubes for 2-3 minutes. Transfer the finished ingredient to a clean plate. The meat is fried in the same oil until golden brown.
Tomato paste, sugar and vinegar are mixed in a separate container. Instead of tomato sauce, you can use a couple of ripe tomatoes. In this case, the vegetables must be peeled and scalded with boiling water. Tomato pulp is chopped to a puree state using a blender.
The resulting sauce is added to the meat. If desired, the dish can be pepper and salt. Pineapples are also transferred to the pan. They continue to stew the pork under a tightly closed lid for another 15-20 minutes. Heat is reduced to medium. If there is not enough liquid for stewing, add a little syrup drained from pineapples into the pan.
Soy sauce is traditionally used in the preparation of Chinese dishes. Therefore, it can be added instead of salt when braising pork with pineapple.
The dish is served hot, having laid out the meat in portioned plates and sprinkled with plenty of fresh herbs. As a side dish, you can use unleavened long-grain rice, spaghetti, boiled potatoes. This is a basic pineapple pork recipe. Depending on your own imagination, you can significantly diversify the taste of the dish, for example, by adding sweet bell peppers.
