Falafel is a dish of Arabic cuisine. It is deep-fried balls of chickpea puree. In the Middle East, falafel is sold literally at every turn. In our country, for the time being, you can only find it in vegetarian establishments. Or cook it yourself. This dish is healthy due to the high nutritional value of chickpeas.
It is necessary
Chickpeas (lamb peas): 500 gr., Onions: 2 pieces, garlic: 4 cloves, herbs (cilantro and parsley): 1 small bunch, ground coriander, 1 teaspoon, salt to taste, bread crumbs, oil for frying

Step 1
Soak the chickpeas overnight in cold water with the addition of soda.
Step 2
We wash and pass through a meat grinder.
Step 3
Skip the second time, adding onion, garlic, herbs, coriander and salt. If you don't have a meat grinder, you can grind it in a blender.
Step 4
If the minced meat turns out to be liquid (this can happen due to juicy greens), then add bread crumbs to the required consistency so that a ball can be easily formed from the minced meat. Lightly moisten hands with cold water and sculpt small balls.
Step 5
Deep-fry the balls until crisp. It is better to take deodorized oil for deep fat so that there is no foreign smell.
Step 6
Put the finished falafel in a drushlag or on a paper towel so that the glass will have excess oil.
Step 7
Serve the falafel hot with vegetable salads. In Israel, it is customary to wrap falafel in pita bread, a flatbread made from wheat flour.
