Muffins are a type of cupcake. This dessert is made from wheat or corn flour with the addition of various components: cottage cheese, fruits, berries, chocolate, nuts. It takes a little time to prepare such a dish, and the result is a pleasure even for fastidious gourmets.
Curd muffin recipe
To make curd muffins, you will need:
- 250 g butter or margarine;
- 300 g of cottage cheese;
- 250 g granulated sugar;
- 500 g flour;
- 4 eggs;
- ½ cup raisins (seedless);
- 1 lemon;
- ¾ h. L. soda;
- salt.
For glaze:
- 1 glass of powdered sugar;
- 3 tbsp. l. currant juice.
Scald the lemon with boiling water, carefully cut the zest and grate it on a fine grater. Squeeze the juice out of ½ lemon. Pass the cottage cheese through a meat grinder, and sift the wheat flour through a sieve.
Remove the butter or margarine from the refrigerator beforehand to soften. Then in a bowl, beat the butter with granulated sugar with a whisk or mixer. Add eggs, grated lemon zest and the juice of half a lemon, cottage cheese, raisins, a pinch of salt, flour, and baking soda quenched in lemon juice, one at a time. Mix everything thoroughly and knead the dough - in consistency it should resemble sour cream.
Divide the dough into silicone muffin tins, about 2/3 full. Bake in the oven at a moderate temperature (about 180 ° C) for 25-30 minutes. Then remove the baked goods from the oven, carefully remove from the molds and let the muffins cool. Then cover with glaze. To prepare it, mix the icing sugar with currant juice until smooth. Dry the glazed muffins in a warm oven and decorate to your liking.
Recipe for curd muffins with chocolate
To make curd muffins according to this recipe, you will need the following products:
- 250 g soft cottage cheese;
- 250 g granulated sugar;
- 1 egg;
- 150 g of chocolate;
- 200 g of wheat flour;
- 30 g of cocoa powder;
- 1 tsp baking soda;
- ¼ h. L. salt;
- 250 ml of water;
- 80 ml of vegetable oil;
- 1 tbsp. l. table vinegar;
- 1 tsp vanilla essence.
Preheat oven to 180C. Line the muffin molds with blank paper molds. Whisk soft cottage cheese with some granulated sugar (about 50 grams) in a small bowl until smooth. Add the egg and mix everything into a homogeneous paste. Grate the chocolate on a coarse grater and combine the resulting chocolate chips with the curd mass.
Sift the flour into a large bowl and combine with the remaining sugar, cocoa powder, baking soda and salt. Add water, vegetable oil, 6% table vinegar, vanilla essence and stir all ingredients until smooth.
Fill the muffin molds halfway with the cooked dough. Place a full tablespoon of curd in the center of each pan. Bake in the oven for 20-25 minutes, until the wooden toothpick inserted in the middle of the muffin remains dry after removing.
Then remove the baked goods from the molds, cool completely on the wire rack and serve. If desired, muffins can be coated with lemon or orange glaze.
