- To prepare choux pastry for pancakes, you need to take all the same products as for regular pancake dough:
- - equal parts milk and kefir,
- - flour,
- - 1-2- eggs,
- - salt and sugar to taste,
- - oil for greasing the frying pan.

Step 1
To begin with, mix in equal proportions 1 part of milk and 1 part of kefir. Then add flour (it is better to sift it). Important! The amount of flour should be sufficient to make a dough similar in consistency to thick sour cream.
Step 2
Add an egg to the resulting mass of flour, milk and kefir (usually one is enough, but two are possible if you have a lot of dough).

Then add salt and sugar to your taste.
Step 4
And now the most important thing is that the dough needs to be “brewed”. To do this, take a sufficient amount of boiling water and gradually, while stirring, pour the boiling water into the still thick dough. Boiling water should be added until your dough is of the same consistency as pancake dough should be: thin enough to spread over the pan in an even layer.
Step 5
You can immediately add vegetable oil to the dough, then you practically do not need to grease a frying pan with it.
