Many housewives have long been engaged in pickling beets for the winter. It is better to marinate beets in the autumn season when fresh crops are harvested. When buying a root vegetable, you need to remember that the vegetable must be strong and without damage, the presence of green shoots at the base of the vegetable indicates its freshness. The color of beets can vary from red to maroon, it all depends on the variety and region of origin.

For pickled beets, you need to prepare:

- 4 kilograms of beets;

- 1 kilogram of tomato;

- 400 grams of onions;

- 2 tablespoons of 70% table vinegar;

- 1 glass of water;

- 2 tablespoons of salt;

- 400 grams of sugar;

- 400 grams of vegetable oil;

- 3 large heads of garlic.

Beets must be thoroughly rinsed and peeled. Then cut into thin strips and place in a large saucepan.

You can grate the beets for Korean carrots or use a vegetable cutter. Many people prefer to cut the sweet root vegetable into cubes; this will not change the taste of the dish, but it can increase the stewing time.

Dissolve the vinegar in a glass of water and add to the beets. Peel the onion, cut into half rings and add to the beets. Put the saucepan on low heat. Peel the tomatoes, chop finely and send to the pan with vegetables. After the contents of the pan boil, add sugar and butter. Everything must be stewed for forty minutes. Peeled and crushed garlic is added ten minutes before the end of the heat treatment. Pickled beets are laid out hot in sterilized jars and rolled up.

Pickled beets can be used as a garnish for meat, dressing in borscht, or as an independent dish.

- 500 grams of beets;

- 100 grams of 9% vinegar;

- 250 grams of water;

- 125 grams of granulated sugar;

- 1 teaspoon of salt.

- 2 pieces of cloves;

- 1 bay leaf;

- 5 pieces of coriander beans;

- 8 pcs. black peppercorns.

Beets must be thoroughly washed, wrapped in foil and sent to a hot oven for baking. For this dish, it is preferable to take sweet root vegetables. The oven heats up to 200 degrees Celsius. Beets are cooked for about one hour, it all depends on the size of the root crop.

After the set time has passed, the beets must be removed from the oven and allowed to cool. Cut the cooled vegetable into large cubes. To prepare the marinade, you need to combine water and vinegar, add all the spices, salt and sugar. Bring the marinade to a boil and remove from heat. Combine the cooled beets and marinade and send to the refrigerator for a day.

Baked beets can be consumed without a long wait by making a marinade with 1 tablespoon of balsamic vinegar, 2 tablespoons of vegetable oil and salt.

Beets are not recommended for use in large quantities for people who have: problems with low blood pressure; diabetes; urolithiasis; increased acidity of the stomach.
