Charlotte is one of the simplest sweet pastries. However, I very often hear complaints that I can't bake a fluffy charlotte. I will share with you my proven recipe, following which even a beginner without special culinary skills can bake the perfect charlotte.

Ingredients:

- apples (preferably hard and sour, for example Antonovka or white filling) - 6 pieces of medium size;

- eggs - 6 pieces;

- granulated sugar - 1 glass;

- wheat flour - 1 glass;

- vanilla sugar - 10g;

- butter for lubricating the mold;

- flour or semolina for sprinkling the mold.

Preparation

Important: before you start making the dough, you need to prepare the apples, oven and baking dish in advance. The main secret of a fluffy charlotte is to pour the properly prepared dough into the mold as quickly as possible and put it in a hot oven, and not open it until it is completely cooked. And no baking powder or soda slaked with vinegar is required.

Cut the apples into small pieces, after removing the core with the seeds and cutting off any rotten areas.

Turn the oven 180 degrees. Heat a baking dish slightly in the oven, brush it with butter and sprinkle evenly with a thin layer of flour or semolina.

In a bowl, use a mixer to combine eggs, sugar and vanilla sugar. Beat for at least 7 minutes. It is important! The volume of the dough should increase by 3 times, so take a bowl with a margin. Continuing to beat, gradually add flour there.

After the dough is evenly mixed, quickly mix it with the chopped apples. Put the resulting mass in a baking dish. place in a preheated oven and bake for 40-50 minutes. Do not open the oven while cooking. otherwise the dough will settle.

In principle, you can first put the apples separately in a mold, and then pour the dough, but in this case, the bottom of the cake turns out to be too wet, and I like when the apples are more evenly distributed in the dough.

As soon as the cake turns brownish and begins to lag behind the mold on the side, you can turn off the oven. Don't take out the cake right away - let it cool down with the oven. Sprinkle the finished cake with icing sugar.

It is very tasty to eat a warm charlotte with ice cream. I really like to eat charlotte with sour cream - the sour taste of sour cream harmonizes very well with sweet biscuit dough.
