There is nothing easier than Caesar salad. It has become a classic snack due to its ease of preparation. Such widespread popularity has led to the emergence of different variations of the salad. To prepare the basic "light" version, you need only 4 ingredients: Romano salad, Parmesan cheese, special Caesar sauce and wheat croutons. A richer and more nutritious salad can include meat, vegetables, eggs. If you have never prepared a Caesar salad yourself, be sure to try it - the process will not burden you much, but you will like the result.

- - Romano salad (aka lettuce) - 1 piece (about 500g);
- - wheat bread without crusts - 200g;
- - grated Parmesan cheese - 2 tablespoons;
- - chicken breast / shrimps / boiled beef - 500g;
- - ground garlic - 1 teaspoon;
- - cold-pressed olive oil - 2 tablespoons;
- - refined vegetable oil - 200ml;
- - chicken egg - 1 piece;
- - lemon juice - 2 tablespoons;
- - table mustard - 1 teaspoon;
- - Worcestersky sauce - 1/2 teaspoon;
- - salt, freshly ground black pepper - to taste.
Instructions
Step 1
Cut white bread without a crust into cubes about 2x2 cm and dry until lightly browned. This can be done in two ways - in a dry frying pan without oil over low heat for 20-30 minutes or in the oven at t = 180 ° C for 10-15 minutes. For even browning, the croutons need to be turned over periodically. At the very end of cooking, you can lightly sprinkle them with aromatic extra virgin olive oil and sprinkle with dried garlic, stir everything and turn off the heat. You can also use fresh, finely chopped garlic, but the flavor will be more pronounced.
Step 2
Now you need to prepare the protein part. This can be chicken breast, shrimp, or even beef. Fry the chicken breast in vegetable oil for 4 minutes on each side over high heat until browned. After cooking, cut into small pieces. The shrimp can be boiled quickly in salted water and peeled, or peeled and fried first in vegetable oil, just like chicken breast. It is better to take the beef boiled in advance, and cut the cold one into small pieces that will be convenient to eat.
Step 3
Rinse, dry and chop Romano lettuce leaves.

Now prepare the mayonnaise-based sauce. You can take ready-made mayonnaise to speed up the process, and if you have an immersion blender, you can prepare the base yourself. Send a raw chicken egg to a saucepan with boiling water for 1 minute, no more - it should not boil. After a minute, take out the egg and put it in cold water to cool. Pour refined vegetable oil into the blender bowl (unrefined oil has a pronounced taste and aroma, which can ruin the dish). When the egg has cooled, break it into a bowl of butter and beat with a blender until it emulsifies.
Add a few drops of Worcester sauce, a couple of tablespoons of lemon juice, and one teaspoon of mustard to the mayonnaise base. Add salt and black pepper to taste.
Since Worcestershire sauce is not always available, you can try other additives like anchovy paste, Teriyaki sauce, or something else. Add the experimental additives a little at a time to a small amount of the mayonnaise base to see if the flavor suits you. If everything suits you, then make the sauce as much as you need for the salad dressing.
Step 5
When the dressing is done, mix well with the chopped lettuce leaves. Add croutons and protein. Stir again. Sprinkle with grated Parmesan cheese. The salad is ready to eat!
