Step 1
Pate. Soak the veal liver in cold water to remove all the blood. Then remove the film from the surface and rinse thoroughly. Cut the liver into small pieces. Pour vegetable oil into the cauldron. Place the chopped liver in it and let it stew well. To determine if it's done, cut the slice in half. The incision should be light pink. Rub the cooked liver with butter with a wooden spoon.
Step 2
"Venetian style". Clean the liver from films and rinse under running cold water. Cut into small slices. Cut the onions into rings. Chop the herbs finely. Heat a skillet with butter and oil. Saute the onions lightly. When it turns golden, add greenery. Pour the broth into a skillet and let it boil. Lay out the liver and cook, stirring constantly. Season with salt and pepper to taste. You can use mashed potatoes or pasta as a side dish. Sprinkle with herbs on top.
Step 3
"Berlin style". Peel the onions and cut into rings. Peel the apples, remove the core. Cut into cubes. Rinse the veal liver, remove the foil and divide into portions. Season with salt and pepper, then roll in flour. Pour vegetable oil into the pan and fry the onions until golden brown. In another bowl, simmer apple slices in butter. Fry the liver separately. Place the sauteed onions and apples on a plate. Place the liver on top. Garnish with herbs or grated parsley root.
Step 4
Fantasy salad. Rinse and cleanse the veal liver. Then cut it into strips. Fry the liver in a preheated skillet until tender. Place on a plate and cool. In the same oil, simmer finely chopped onion until half cooked. Then pour the soy sauce into the skillet. Boil the eggs and cut into cubes. Mix all ingredients and season with mayonnaise. Garnish with grated yolk and herbs on top.
