This dietary fish of the perch family is most often boiled or fried. But pike perch baked in the oven is no less tasty for me. Either with mushrooms and cheese, or with potatoes, tomatoes and olives.
Instructions
Step 1
Wash the potatoes. Boil it in a peel. Peel it, cut each potato into 4 pieces. Fry 5 tbsp. tablespoons of oil until golden brown.
Step 2
Saute the peeled shallots in another skillet over low heat. Keep it on the stove for 10 minutes over low heat.
Step 3
Wash the pike perch. Cut off the fins from it. Make 4-5 cuts on the back of the fish. Put a basil leaf in each. Line a baking sheet with parchment paper. Lubricate it with 4 tbsp. spoons of oil. Place the fish on the paper. Pour 4 more tbsp. spoons of oil. Season with salt and pepper. Preheat oven to 225 ° C, bake fish for 18 minutes.
Step 4
Cut the tomatoes into 1 cm thick rings, place in a bowl and season with salt. Finely chop 25 g of parsley and garlic. Sprinkle it over the tomatoes. Add fried potatoes and onions, olives to a bowl. Salt and pepper.
Step 5
Remove the baking sheet with fish from the oven. Put the resulting potato and vegetable mixture on both sides of it. Bake for another 5 minutes. Sprinkle the finished dish with the remaining parsley.
