Sponge cake with cherries is a great dessert option, as it is prepared quickly and easily. The filling can be either fresh pitted or frozen cherries. The berry remains firm. You can eat it warm.
It is necessary
- Dough:
- eggs-4 pcs.;
- flour-1 tbsp;
- sugar-1 tbsp.
- vanillin-1gr. (bag);
- Powdered sugar (for sprinkling) - to taste;
- Margarine for greasing the mold.
- Filling:
- cherry - 200 gr.;
- sugar-100 gr.;
- flour - 0.5 tsp
- Additionally you need:
- 2 deep bowls;
- mixer;
- form for baking.
Instructions
Step 1
Turn on the oven. While you cook the dough, it will heat up to 180 degrees.
Wash the cherries. Remove pits from it if using fresh. If frozen, then you must first defrost it. Add sugar to the cherries. While the biscuit is preparing, the cherry will let the juice out. Both juice and berries will be useful for making the filling.
Step 2
A biscuit can be prepared by separating the whites from the yolks, whipping them separately with sugar, or you can simply beat the sugar and eggs into a fluffy foam with a blender, add sifted flour and vanillin, and gently stir with a spoon from top to bottom. Brush the bottom of the tin with margarine or butter. Pour the dough into it and place in the preheated oven for about 25 minutes. The finished biscuit should be high, the match should remain dry when pricked.
Step 3
Dissolve 2 teaspoons of sugar in half a glass of hot water - this is the impregnation. Saturate the biscuit with a little syrup. Pour the rest into a bowl with cherries.
Put the bowl with cherries and sugar on low heat. The sugar should just dissolve, and the cherries should warm up and become softer. Add a little flour to the cherry syrup and, stirring constantly, until thick. The syrup will become sticky, the berries will not fall out of the cake.
Step 4
Let the filling cool slightly. Cut the biscuit into 2 pieces. Place the filling on one of them, cover the other. Sprinkle icing sugar on top of the pie. You can serve it right away, or you can let it stand. Over time, the pie only becomes tastier and juicier.
