Nigiri sushi is just a traditional type of sushi - a rice block covered with a filling. The filling can be fish (salmon - sake-nigiri, tuna - maguro-nigiri, eel - unagi-nigiri), shrimp - ebi-nigiri, Japanese omelet - tamago-nigiri. Cut the fish into thin slices with a sharp knife, peel the shrimp, cut lengthwise and spread, cut the omelet into strips. Form a rice ball in your hands, then shape it into a block, immediately cover with the prepared filling and wrap a little from the edges so that it "hugs" the rice. Sushi with eel and scrambled eggs is usually tied in the middle with a thin strip of nori.

Guankanmaki - translated from Japanese means "battle ship". These are rice sticks covered with filling and wrapped in nori strips. Indeed, these sushi are like boats. Form a rice block, take a strip of nori twice the height of the block, wrap the rice so that it is at the base, and there is a depression on top for future filling. And it can be very diverse: salmon caviar (ikura-guancanmaki), shrimp caviar (ebikko-guancanmaki), cubes of tuna and quail egg yolk on top (maguro-usura-guankanmaki), fish cubes with chopped herbs, shrimp salad with avocado and Japanese mayonnaise, crab meat salad and more. It all depends only on the imagination of the cook.

Only rice and vegetables or mushrooms are involved in the preparation of vegetarian sushi. For example, shiitake maki (mushrooms), oshinko maki (radish), aspara (asparagus), sashioku (assorted vegetables). Such sushi is prepared in two ways: in the form of rolls (mushrooms and vegetables are cut into thin strips and placed in a pad of rice on a nori sheet) or in the form of guancanmaki (sushi boats).

Kawarizushi. And this type of sushi is not served in sushi bars and restaurants. This is a recipe for Japanese mothers and grandmothers and is easy to make as it doesn't require any skill in sculpting rice. Add sesame seeds and finely chopped ginger to the boiled rice, stir. Transfer the mixture to a flat-bottomed ceramic bowl (or a special Japanese sushi-oka bowl). Cut fish (such as salmon and eel) into strips. Shiitake mushrooms, asparagus stalk cut into small slices, take a few teaspoons of boiled corn kernels (canned). Put most of the fish and other ingredients on the rice mixture, stir, and top with the remaining filling.
