Before you start cooking the porridge, the day before, sort out the peas, rinse, fill with chilled boiled water and leave to swell for at least two hours. The longer the peas are soaked, the better. For example, if you pour it in the morning, you can cook porridge in the evening.

Rinse swollen peas again. Then fill it with water at the rate of two glasses of water for one glass of peas and set to cook. After boiling, reduce heat to low.
