Step 1
You can determine whether you need to soak the onion when you shred it. The sweet varieties produce less harsh juice and can be used neat in salad by cutting them into rings. When the onion is bitter, the easiest way to soften it is to pour boiling water over it and leave it in it for a few seconds. Then the onion is washed with plain cold water, slightly wringing out with your hands. His taste remains unchanged, but the sharpness is significantly reduced.

A traditional and familiar product is onions soaked in vinegar. You can use 9% table vinegar or apple cider vinegar for this. In order for the onion to marinate evenly, chop it and fill it with liquid so that it completely covers the onion. Soaking time depends on taste, from one hour to overnight. Usually for such a long time, onions are soaked together with meat for barbecue. Vinegar makes the onion soft and slightly sour. If after that the onion will be used to make a salad, then you can rinse it from excess vinegar with water or put it in its original form, but then the aftertaste of vinegar will remain.
Step 3
The soaked onion is original in taste, and lemon juice is used for pickling. For one medium-sized onion, enough juice squeezed from half a lemon. To simplify the squeezing process, the lemon pulp is repeatedly pierced with a knife or fork, after which the juice can be obtained by simply squeezing the fruit in the palm of your hand. The pits from the lemon are removed, since it will not be very convenient to separate them from the onions later. Onion rings two to three millimeters thick are poured with lemon juice and mixed evenly. You can use onions for further cooking in an hour.
