Vegetable caviar is an amazingly delicious dish that can be served as a cold snack, or you can make a sandwich by rubbing garlic on the bread and laying in a layer of this caviar.
It is necessary
- - 3 medium-sized zucchini (750 g each)
- - 1 carrot
- - 2 onions
- - 2 cloves of garlic
- - 2 tbsp. vegetable oil
- - 2 tbsp. tomato paste
- - ground black pepper and salt to taste
Instructions
Step 1
Peel the zucchini and cut into small cubes. Grate the carrots on a coarse grater, and finely chop the onion.
Step 2
Pour the oil into a slightly preheated skillet, place the carrots and onions in it. Fry the vegetables a little, then add the zucchini to them.
Step 3
Continue to fry the vegetables, stirring occasionally. After 20 minutes, add chopped garlic, tomato paste, salt and pepper.
Step 4
Mix everything thoroughly. Place the lid on the skillet and simmer the vegetables for 20 minutes over medium heat. Cool the cooled dish and grind until smooth. Vegetable caviar can be chopped in a blender or in a meat grinder, depending on the desired consistency.
