The easiest way to "put under the knife" a large number of eggs is to make an egg salad from them. There are many recipes for such an appetizer, in America the one in which it is used is very popular:

  • 6 cool eggs;
  • 3 stalks of celery;
  • a pinch of paprika;
  • a pinch of celery seeds;
  • a pinch of black pepper;
  • 1 teaspoon of Dijon mustard

Eggs are cut into small cubes. The celery stalks are chopped into pieces. Whisk the dressing from the remaining ingredients. Mix all the ingredients in one bowl and put in the refrigerator for 30-40 minutes to let the salad brew. This appetizer is served not only with meat, poultry, vegetables, but also put as a filling in sandwiches. Stuffed eggs

Stuffed eggs can be a great and very varied appetizer, because the filling in them can be either the most refined - caviar, other seafood, chopped truffles, or the simplest, made only from yolks and a small amount of spices. Try the compromise recipe, stuff the eggs with affordable but tasty tuna.

You will need 10 eggs;

  • 250 grams of tuna canned in its own juice;
  • 1 head of red onion;
  • 4 canned chili peppers
  • 10 pitted olives;
  • 5 tablespoons of thick mayonnaise;
  • salt.

Drain the liquid from the tuna. Chop the onion, olives and pepper, cut the eggs on the long side, remove the yolk. In a bowl, combine chopped onions, peppers, olives, tuna, yolk and mayonnaise. Stuff eggs, remove before serving for 10-20 minutes in the refrigerator.

Scottish eggs

For those who prefer "hotter", the recipe for boiled eggs prepared according to the traditional Scottish recipe is suitable.

You will need:

  • 4 hard-boiled eggs;
  • 300 grams of sausage meat;
  • 1 tablespoon chopped green onions
  • 1 tablespoon chopped parsley
  • 125 grams of wheat flour;
  • 125 grams of bread crumbs;
  • 1 raw egg
  • salt pepper.

Minced sausage - a mixture of finely chopped meat and minced meat (pork, veal, chicken, turkey), seasoned with spices. Mix chopped greens with it and divide into four parts, form cutlets out of them and place on a work surface. Dip the eggs in flour and place in the minced meat, pressing a little, then take each cutlet in your hands and shape it into a spherical shape, making sure that the minced meat is completely covered with the eggs. Dip each patty in a beaten egg and roll in breadcrumbs. Deep-fry and serve.

Also, boiled eggs are placed in pates, meat rolls and pie filling.
