Cutlets are a versatile dish. It can be made from meat, poultry, fish and even liver. The latter may not be as popular, but liver cutlets should not be underestimated. They turn out to be not only very tasty, but also very tender. It is recommended to give such a dish to children, because the liver contains a huge amount of useful substances, in addition, it will be more convenient for babies to eat such cutlets than meat ones, since the latter are not so soft.

There is another type of liver cutlets, but they are most often called liver pancakes. The fact is that in the process of their preparation flour and chicken eggs are added to the minced meat.

To prepare tender liver cutlets, you will need: 500 g of beef liver, 2 onions, 3 cloves of garlic, 7 tbsp. l. semolina, 5 tbsp. l. vegetable oil, baking soda on the tip of a knife, bread crumbs, black pepper, salt, spices to taste.

Other popular liver dishes are liver cake, liver with apples, pate. Liver is often added to salads, pancakes and yeast pies are prepared with it.

To make beef liver patties, first prepare the main ingredient. Take the liver and rinse it thoroughly under warm running water. If necessary, remove the film from the surface of the offal, pat dry with a tea towel or napkins, then place the liver on a cutting board and cut into medium-sized pieces. Set the chopped liver aside.

If you want to completely get rid of the bitterness that is characteristic of liver dishes, soak the offal in cold milk 2-3 hours before cooking.

Peel the onions, rinse under cold running water and cut into small cubes. Place the onion in a preheated skillet and fry it until golden brown in a little vegetable oil. This process will take you no more than 2-3 minutes. Then take a blender or meat grinder and chop the liver and sautéed onions. Stir the resulting minced meat until smooth.

Peel 3 cloves of garlic and squeeze them into the minced meat through a press. Then add baking soda, salt and semolina to the liver mass, if desired, you can add your favorite spices or fresh herbs. Stir the minced meat thoroughly and let it rest for 30 minutes. At this time, take a large skillet and pour the vegetable oil into it. Place a skillet over medium heat and preheat.

Pour the bread crumbs into a separate container. Using a tablespoon, take a small amount of minced liver and roll it in breadcrumbs, forming a cutlet with your hands. When all the patties are ready, put them one by one in a preheated pan and fry on both sides until golden brown.

Tender liver cutlets are ready! You can serve such a dish with absolutely any side dishes; boiled or baked young potatoes and fresh vegetables are perfect for liver cutlets.
