We all love this simple and casual salad - vinaigrette. But what if you add a little imagination, effort and turn it into a wonderful dish that will decorate the festive table and surprise the guests ?!

It is necessary

  • For 1 serving:
  • - potatoes - 3 pcs. (300 g);
  • - beets - 1pc. (200 g);
  • - carrots - 2 pcs. (200 g);
  • - pickled cucumbers - 2 pcs. (200 g);
  • - vegetable oil - 2 tbsp. spoons
  • For refueling:
  • - juice of half a lemon;
  • - vegetable oil (preferably olive oil) - 100 ml;
  • - garlic - 1 clove;
  • - green peas - 100 g;
  • - dill, parsley;
  • - salt to taste

Instructions

Step 1

Rinse the potatoes, beets and carrots thoroughly. We cook all vegetables in separate containers. In this case, it is important not to overcook the products, it is better to let them be a little damp so that they can be easily cut.

Cool the boiled vegetables and peel them.

Step 3

Next, we choose the sharpest knife and mentally prepare ourselves for jewelry work.

Step 4

Cut the beets, potatoes, carrots and cucumbers into cubes with a side of 12 mm. It is very important to cut the vegetables evenly. If you don't rely on your eye well enough, use a ruler. We lay out all the cut cubes again in separate bowls. We fill with vegetable oil, mix gently so as not to damage or spoil the shape. The oil will protect them from beet staining.

Step 5

We do not relax, beauty requires sacrifice and patience. Therefore, we take a flat dish and begin to lay out a square - 4 cubes by 4, trying to match the colors of the cubes beautifully. Thus, we make 4 rows.

Step 6

To make the sauce, put green peas, peeled garlic, lemon juice, herbs and oil in a blender. We grind all this. Add salt to the resulting mass. Serve the sauce in a saucepan or carefully pour it onto a dish around the resulting cube.

Step 7

This version of the vinaigrette is, of course, difficult to prepare. Of course, if you cook it for 12 people, then even the strongest patience will not be enough. But for a Sunday dinner for a family of 3-4 people, it is quite possible to cook. It will be interesting to involve children in the preparation of this salad.
